What I Eat In A Day
Everyday is different, yes. But the days seem to be more and more similar lately. Quarantine has had me sticking to things I like and that make me feel good, especially when it comes to eating. However, there is this thing called snacking that I partake in much more often now. Being cooped up inside most of the days and dangerously close to my pantry with the snack cupboard just staring at me (so rude) results in me… well, snacking. But anyways… this a typical day in quarantine… food-wise…
Breakfast (9 am)
2, sometimes 3 breakfast cookies. Literally, every damn morning. I’m obsessed with them. I posted the recipe here. It’s truly like having a bowl of oats every morning since its really just oats, banana, and peanut butter in them. If I don’t have the cookies, I will sometimes have oats. Not going to lie, before quarantine I always intermittent fasted… I actually did feel great doing this, and waiting until lunch time to eat. There’s absolutely no way I have the willpower to wait until lunch while those breakfast cookies yell my name from the freezer (I like them frozen and then sometimes warm them up….. I can’t stop thinking about them while writing this).
Oh and I eat these with coffee.. obviously.
Lunch (all hours)
Not a big lunch girl. I’m a huge snacker. Especially now that I’ve just been at home. So I have about 2-3 snacks a day… usually crackers with hummus; I make sure to get raw crackers or kale chips, very minimal and healthy ingredients. I love Moon Juice raw crackers, Sweet Potato Awesome chips, plantain chips, or the beet chips that are just dehydrated beets. I love Majestic Garlic brand hummus (could eat the whole jar in one sitting). I have also been loving coconut yogurt bowls with granola, banana, and almond butter or fresh pears with nut butter.
Dinner
Almost every night (a few nights I’ve ordered to support small businesses around), I eat a big veggie bowl. I love my air fryer more than anything. It’s perfect for people who want to be healthy and creative but are lazy af. You pop random shit in there and just hope for the best and honestly, 9/10 times it turns out amazing. Usually I boil rice noodles, or fry cauliflower rice, and then I put sweet potato and some veggies in the air fryer with some spices. Then I put some coconut aminos, hummus, and The Honest Stand dip on top (my favorite flavor is the smoked cheddar) and nutritional yeast.
I also am addicted to these products from my local farmers market and I’ve actually even gotten them delivered during this time. I usually always add these to my bowls too when Im stocked up on them
Mom’s Products (their pesto and garlic dip is insane)
Sizzling Ginger (their baked veggies, and quinoa naan bread is SO strange yet SO incredible)
Yalla Hummus (my favorite hummus…the original is the best)
Dessert
Honestly sometimes a breakfast cookie (now that i’m writing it out... I may need to cut back) OR Hu Chocolate. Even just a square of that stuff and I’m satisfied. A friend started a bakery (online) called Nowhere Bakery and it’s UNBELIEVABLE. She sent me a box of goodies and not only are they THE best ingredients I’ve ever seen (so healthy!) but also blew my mind how good they tasted. Her nutter butter she makes is just out of this world. So that. And also, I’m weird but licorice tea?
Idk. Maybe I’m losing my mind. But this stuff makes me feel good and makes me happy.
Also craving a really good vegan cinnamon roll.
Anyways, I’ll keep you posted if I venture out of my comfort zone and try some recipes outside my cookies and air fryer life.
